Banana Muffins

Muffins tend to be full of fat and high in calories. But making muffins from scratch at home can be supper fun and way healthier for you. My mom found this recipe and boy let me tell you what it is divine and has now become one of our favorite snacks.

 Banana Muffins:

Ingredients

  • 1 cup whole wheat flour
  •  1/2 cup all-purpose flour (We chose to do whole wheat)
  •  1 teaspoon baking soda
  •  1/2 to 1 teaspoon ground nutmeg
  •  1/4 teaspoon salt
  •  2 eggs, lightly beaten
  •  1/2 cup unsweetened applesauce
  •  6 tablespoons honey
  •  1/2 cup golden raisins (optional)

Directions

  1. In a large bowl, combine the first five ingredients. Combine the eggs, banana, applesauce and honey; stir into dry ingredients just until moistened. Fold in the raisins.
  2. Coat muffin cups with cooking spray; fill two-thirds full with batter. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely. Yield: 14 muffins.
Enjoy your muffins and don't forget to get a good work out in!
